Alpha-amylase is a starch hydrolyzing enzyme which has many industrial applications. In this study, Bacillus subtilis QM3 has ability to produce α-amylase. An algorithm for calculating the Hurst exponent is presented, which allows one to evaluate the degree of chaotization of the signal in question.
