Abstract: analytical methodologies based on capillary electrophoresis (ce) and high performance liquid chromatography (hplc) were implemented for the separation and quantitation of (±)-catechine, (-)-epicatechine, (-)-epigallocatechine, (-)-epicatechine gallate and (-)-epigallocatechine gallate in 5 samples of 3 cacao varieties grown in colombia. hplc was found to be more reproducible than ce, which turned out to be faster, more economical and less contaminant. (±)-catechine (0,07- 0,79 mg /g cacao) and (-)-epicatechine (1,99-9,66 mg /g cacao) were determined in aqueous extracts of the 3 cacao varieties.
