不同品种薄壳山核桃营养成分比较

Abstract:

为了比较5个品种薄壳山核桃的品质差异,对薄壳山核桃中粗脂肪、粗蛋白、氨基酸、脂肪酸和矿物质等营养成分进行了测定。结果表明:5个品种薄壳山核桃中‘波尼’和‘绿宙一号’的粗脂肪含量较高,分别为710.21、710.31g/kg。其中‘绿宙一号’的亚油酸、亚麻酸含量最高,分别占总脂肪酸含量的27.67%、1.32%;品种‘莫汉克’的粗蛋白含量最高,达到126.14g/kg,必需氨基酸总量也最高,达到40.97g/kg;各品种ca、k、mg和p等矿质元素含量丰富,品种间差异不显著。
