糖胺聚糖对蛋壳品质的调控

Abstract:

糖胺聚糖(GAGs)是鸡蛋壳有机组分中的重要组成部分,参与形成蛋壳的超微结构,进而调控蛋壳品质,其分泌贯穿蛋壳形成的全过程。本文从GAGs的种类和生物活性、在蛋壳中的分布和对蛋壳超微结构的作用,及蛋壳中GAGs的调控等方面,简述了GAGs影响蛋壳品质的研究进展,以期为蛋壳品质的研究提供新思路。
