利用电子鼻技术评价桃果实成熟度的研究

Abstract:

采用电子鼻系统对不同成熟度‘锦绣黄桃’果实进行评价研究.主成分分析(PCA)和判别因子分析法(DFA)的结果显示,电子鼻可以较好地区分转色期、成熟期和完熟期的果实,但成熟期、完熟期的果实有部分区域发生重叠.为了评价电子鼻的分析能力,将其预测结果与传统的理化检测方法(硬度、可溶性固形物、可滴定酸、挥发性香气组分)及生理指标(乙烯释放速率)得到的结果进行了比较。结果表明,采用电子鼻系统中的PCA较DFA更能准确区分桃果实的不同成熟度。
