福建省稻米镉含量及其健康风险

Abstract:

为评价福建省稻米中重金属镉所引起的健康风险,于2013年在全省区域共采集1458份稻米样品,采用石墨炉原子吸收光谱法(GF-AAS)检测稻米中镉含量,应用单因子污染指数法进行稻米镉超标评价,并用非参数概率法对稻米中镉的膳食风险进行评估。结果表明,所检稻米的重金属镉含量为0.001~1.158 mg·kg-1,仅有5%左右的样品超出了我国食品卫生标准值(0.2 mg·kg-1);稻米中镉的风险熵(HQ)在95%、97.5%和99.5%高暴露位点分别为1.34、1.87和3.56,均大于1,潜在风险较大,并且晚稻对镉的吸收能力高于中稻和早稻。表明通过食用稻米途径,福建部分地区居民存在重金属镉过量积累的风险,应引起重视并对稻米中的镉含量进行追踪监测
