水射流切割半加工莴苣抑制褐变实验和机理分析

Abstract:
针对传统方法切割半加工果蔬时产生褐变的问题,研究了高压水射流切割半加工果蔬的方法。讨论了水射流半加工果蔬的机床结构、工艺流程,对水射流半加工果蔬抑制褐变进行了实验验证和机理分析。
