NaHCO3浸泡对发芽大豆植酸含量影响及其发芽条件优化

Abstract:

研究NaHCO3浸泡与发芽条件对大豆中植酸含量的影响并对其进行优化,探讨不同发芽时间下植酸含量、植酸酶活性、植酸与总锌分子质量比值(PA/Zn)、植酸与总铁分子质量比值(PA/Fe)的变化。以大豆籽粒为试材,去离子水预浸泡为对照,通过单因素试验(NaHCO3浸泡浓度、浸泡时间和发芽温度)与正交试验(L9(33))对发芽条件进行优化,并在最优发芽条件下,测定不同发芽时间时植酸含量、植酸酶活性、总锌和总铁含量。结果表明用0.50g?L-1NaHCO3浸泡处理的大豆,植酸含量在发芽0d时比对照降低11.94%;发芽4d后,与对照无显著差异。在发芽温度33℃、浸泡时间3h和NaHCO3质量浓度0.20g?L-1的最优条件下,发芽4d的大豆中植酸含量降低至(7.92±0.02)mg?g-1,与原料相比,降幅为45.75%;发芽开始时(0d),0.20g?L-1NaHCO3浸泡处理的大豆植酸酶活性高于对照,随着发芽的进行,2种浸泡处理间无显著差异;最优条件下发芽3~4d时,0.20g?L-1NaHCO3浸泡处理的发芽大豆中植酸含量、PA/Zn和PA/Fe值均比对照低。表明大豆籽粒发芽前使用NaHCO3浸泡可显著改善发芽大豆中Zn与Fe的生物利用率,其中Fe的生物利用率可达最优值。
