中国黄牛背最长肌中capn1 mRNA表达与嫩度的关系

Abstract:

采用实时荧光定量PCR方法研究了中国黄牛背最长肌中capn1mRNA表达与嫩度的关系。结果表明,capn1mRNA表达量与宰后第3天的牛肉嫩度高度相关(r=0.855)。酪蛋白底物酶原分析表明,不同肌肉的μ-calpain潜在酶活性存在很大差异,而m-calpain潜在酶活性差异不大。capn1mRNA的表达可能是影响牛肉嫩度的主要因素。
