不同类型辐照处理对黄曲霉毒素脱除效果分析

Abstract:

黄曲霉毒素是真菌毒素中分布最广的一种,其毒性极强,广泛存在于食品与饲料当中,对人类的健康危害极大。辐照技术作为一种食品加工技术对黄曲霉毒素有显著地脱除作用。本文总结了辐照技术对黄曲霉毒素的降解方法,主要包括紫外线辐照、γ-射线辐照、电子束辐照及微波辐照,同时,分析了目前研究方法中存在的问题,以期为采用辐照方法控制食品中黄曲霉毒素提供理论参考。
