DEVELOPMENT OF GALLIC ACID-POTASSIUM IODATE CHROMOGEN BASED MARKER FOR TANNASE ACTIVITYAbstract: The present study reports a novel spectrophotometric method to estimate tannase activity. annase hydrolyse tannic acid to gallic acid and glucose. The reported method is based on the chemistry of chromogen formation by gallic acid and potassium iodate. The chromogen formation is recorded at 525nm. This method offers an advantage over other reported colorimetric assays as it selectively estimate gallic acid and excludes the interference of tannic acid. This method could further be exploited in monitoring the gallic acid content in different food commodities.
