China.Progress has been made constantly in processing technique, output of product increased fairly fast and market situation is quite excellent. At the same time, there exist some problems such as the low overall technical level, sharp difference in product quality, inadequate varieties of product, and inaccessibility in obtaining information as well as production being out of line with marketing. This paper analyses market demand for dehydrated vegetables at home and abroad,puts forward certain concrete suggestions for developing dehydrated vegetables, especially emphasizes the importance of macroscopic control and processing technique.
