Determination of Physicochemical Characteristics and Sugar Compositions of Bee Pollens Obtained From Different Regions

In this study were observed 34 bee pollen samples produced in 21 different provinces in 6 region of Turkey regarding to moisture, ash, protein, fat, fiber and total sugar parameters. Carbohydrate and energy values of samples were calculated. At the end of the study, the mean values were found as 18.8% ± 3.2 protein, 7.6% ± 1.6 fat, 2% ± 0.5 ash, 14.4% ± 2.7 fiber and 40.9% ± 6.4 total sugar, 54,6 ±5,8% carbohydrate, 14.8 ± 1.9% glucose; 19.5 ± 2.0% fructose; 3.8 ± 3.4% sucrose; 0.9 ± 0.6% maltose; 1.2 ± 0.6% turanose; 0.3 ± 0.6%. It was observed that isomaltose and erlose sugars were only found in a few samples and trehalose, melesitose and maltotriose sugars were not found in the samples in general. When the results of the analysis were evaluated statistically, it was determined that there were significant differences between the regions without protein parameter.
