Abstract:

The aim of this study is to introduce the Kalkano?lu Rice Restaurant which has sold its rice with gram since 1856 in Trabzon by shedding light on the historical change and development of the restaurant which is an important part of the food sector. In this context, the historical continuum about the Kalkano?lu Rice Restaurant was summarized and information about the business in terms of generations was tried to be presented. The Kalkano?lu Rice Restaurant, which is a historical place where social memories about the culture of eating and drinking are conveyed in Trabzon which is decorated with both historical and cultural textures, is a bridge between the past and the future. Kalkano?lu Rice Restaurant which was opened by Kalkano?lu Suleyman Aga in 1856 with the slogan of “Ladle has trick, Scale has justice.” sells rice, roast, dried beans and appetizers in the present day by the fourth generation Taner Kalkano?lu and his sons. In order to prevent possible unfair competition at the level of business, Kalkano?lu Rice Restaurant with trademark registration certificate, is a cultural heritage and historical place has an important place in terms of Trabzon
