Traditional Winter Preparation of Families in Nev？ehir Region

Improvement of technology, economy and educational conditions in the world, providing convenience with the increase of technological equipments used in kitchens, some changes due to the culinary culture. Change and transformation, starting with the introduction of fast food into our lives has significantly influenced the traditional culinary culture. In the past, preparations for winter made by imece method, it was also a sign of social solidarity and social unity. In recent years, decreasing preparations for winter, with the introduction of healthy and organic nutrition again collects attention on. In the culinary culture of traditional families in Nev？ehir region winter preparations have an important place. However, it is possible to say that the food storage and preservation technology developed in the recent years has partly caused the elimination of these preparations. In the study, the materials used in the preparation of winter preparations, their construction techniques, time, usage areas are mentioned. Observation and interview technique was used in the data collection stage of the study and the method of functional theory was adhered to in the investigation stage.
