Abstract:

Tourists who visiting a destination seem to want to taste local food in the region besides activities like sightseeing, having fun. Especially with the increasing interest in gastronomy in recent years, it is observed that foreign tourists who visit our country as well as domestic tourists want to try dishes of regional cuisines from international cuisines. Accommodation businesses and food and beverage businesses have tended to meet this increasing demand in order to achieve higher levels of customer satisfaction. For this reason, it is observed that the enterprises have recently been giving more tastes to regional flavors in menus.The main purpose of this study is to determine the rate of local foods presantation in local restaurants. Awareness of local food has been researched and forgetten values abaout that local foods have been brought the light. The research will be carried out in 8 establishments that provide catering services in the province of Mengen in Bolu province. Face-to-face interview technique was used in the research by using qualitative research methods. The resulting data will be subjected to content analysis
