Determination of changes in fatty acid compounds of Mullus surmuletus Linnaeus, 1758 in Antalya gulf in the catching seasons

In this study, biometric values and fatty acid composition of striped red mullet (Mullus surmuletus, L., 1758) in Antalya Bay were investigated as monthly. A total of 80 striped red mullet were used in the study, which were 13,83-17,33 cm tall and weighing 28,50-67,70 g.According to fatty acid analysis, the major fatty acids were palmitic acid (C16:0), oleic acid (C18:1n9c), docosahexaenoic acid (C22:6n-3) and stearic acid (C18:0). The mean n-3 / n-6 ratio in the striped red mullet was 2.69; The mean n-6 / n-3 ratio was 0.39, the mean DHA ratio was 26.99%, and the mean EPA + DHA value was 20.53%. This study shows that striped red mullet are a good source of nutrients due to high levels of EPA, DHA and n-3 nutritional values
