Determination of Antioxidant Capacity of Flesh Fruit, around the Apple Seeds and Peel Apple in Some Apple Varieties from Isparta

Abstract:

In this study, the antioxidant capacities in flesh fruit, around the apple seeds and peel of apple in five different apple varieties obtained from E?irdir district of Isparta province was determined by using ABTS, DPPH and TPC methods. When the results of analysis were examined, it was seen that antioxidant levels differed in terms of varieties, parts and methods. The highest antioxidant activity was found in ‘Granny Smith’.The lowest antioxidant activity was determined in ‘Pink Lady’.The amount of antioxidants in flesh fruit, peel of apple and around the apple seeds were 29.93%, 21.95%, 27.22%, respectively. The amount of antioxidant in the analysis performed by TPC method was higher than that of ABTS and DPPH method
