Abstract:

通过对武汉市民问卷调查,将食品安全风险认知操作化为3个方面的内容,考察当前消费者食品安全风险认知的现状与影响因素。结果显示社会地位分层的3个经典指标对于消费者的食品安全风险认知影响各不相同,其中家庭年收入与职业类别对于消费者的食品安全风险认知有显著正效应,而教育的影响并不显著;不同食品安全风险认知水平的消费者面对食品安全问题会采取不同的回应方式。由此建议从宏观层面加强对于食品安全的监管,从微观层面提高消费者的食品安全风险意识。
Based on investigation from residents in Wuhan,this paper divides the cognition of food safety risk into three aspects to explore the status quo and influencing factors of consumers’ food safety risk perception The result shows that the impact of three classic indicators of social stratification on consumer’s food safety risk cognition is different.Annual income of the family and occupational categories have positive influence on food safety risk perception of consumers,but the effect of education is not significant.Consumers with different food safety risk perception will also take different response ways.Therefore,this paper proposes that supervision of food safety from the macro level should be strengthened and consumer’s food safety risk awareness from the micro level should be improved.
