摘除卵巢对山羊羔肌肉中营养成分的影响

Abstract:
为研究卵巢摘除对山羊羔肌肉中氨基酸、脂肪酸和矿物元素等营养成分的影响,以40只体质量相近的5月龄布尔山羊杂种母羊羔为研究对象,随机分为试验组和对照组,试验组摘除卵巢,对照组不作处理。分别在试验第50天(Ⅰ组)和第80天(Ⅱ组),随机在试验组和对照组中各选取5只,采集背最长肌测定其营养成分。结果显示,试验Ⅰ组氨基酸与对照Ⅰ组无显著差异(P> 0.05);试验Ⅱ组蛋氨酸(Met)质量分数下降到1.883 mg/g,显著低于对照Ⅱ组的3.303 mg/g(P< 0.05)。试验Ⅰ组棕榈酸(C16∶0)、亚油酸(C18∶2)、花生四烯酸(C20∶4)和花生五烯酸(C20∶5)的质量分数均显著下降(P< 0.05),但油酸(C18∶1)的质量分数增加至50.173 3%,显著高于对照Ⅰ组(P< 0.05);试验Ⅱ组亚麻酸(C18∶3)的质量分数下降到0.483 3%,显著低于对照Ⅱ组(P< 0.05)。试验Ⅰ组矿物元素镁、钾、钙、铁、铜和硒元素质量分数与对照组无显著差异(P> 0.05),但锌元素质量分数显著下降(P< 0.05);试验Ⅰ组矿物元素与对照组无显著差异(P> 0.05)。说明,摘除山羊羔卵巢50 d后可明显影响其肌肉组织中部分氨基酸、脂肪酸和矿物元素的质量分数,但随着山羊羔年龄的增长,摘除卵巢对肌肉组成成分的影响作用减弱。
This study was intended to ascertain the effects of ovariectomy on the nutrient content of muscle in Doe Goat. Forty female hybrid does kid of Boer Goat with similar body weight at about 5 months old were randomly divided into treatment and control groups. The goats in the treatment group were ovariectomized at the beginning of the experiment and the control group was untreated. Goats in groupⅠwere slaughtered at the 50th day,and groupⅡwere slaughtered at the 80th day. Then the content of amino acids and fatty acids and mineral element in longissimus muscle were detected. There were no significant differences for amino acids inⅠgroups (P>0.05),and the content of Met declined to 1.883 mg/g in testⅡ,which was lower than 3.303 mg/g of controlⅠ(P<0.05). The levels of palmitic acid (C16∶0),linoleic acid (C18∶2),arachidonic acid (C20∶4) and peanuts five acid (C20∶5) in groupⅠwere significantly decreased compared with controlⅠ(P<0.05),but the content of oleic acid (C18∶1) increased to 50.173 3%,which was higher than that of controlⅠsignificantly (P<0.05). The content of linolenic acid (C18∶3) in testⅡdecreased to 0.483 3% and was lower than that in controlⅡ(P<0.05),but there were no significant differences as to others inⅡgroups (P>0.05). In addition,the differences of the content of magnesium (Mg),potassium (K),calcium (Ca),iron (Fe),copper (Cu),and selenium (Se) between groupⅠand controlⅠwas not significant (P<0.05),except for zinc (Zn),which was lost significantly in testⅠcompared with controlⅠ(P>0.05). It was indicated that the ovariectomy could improve the conventional nutrients and some amino acids,fatty acids in the muscle tissue of goats,but the effect weakened with the increase of age.
