Abstract:

以‘北陆’和‘伯克利’2个蓝莓品种为试材,在0 ℃±0.5 ℃下采用气调保鲜箱进行贮藏,分析果实贮藏期及贮藏后货架5 d后果实品质生理变化规律。结果表明:气调保鲜箱可降低蓝莓果实贮藏微环境中O2体积分数,提高CO2体积分数,蓝莓贮藏及贮藏后货架期间果实硬度、可滴定酸、维生素C质量分数不断下降,可溶性固形物先上升后下降,坏果率不断升高,多酚氧化酶(PPO)和过氧化物酶(POD)均出现不止一次活性高峰。‘伯克利’蓝莓贮藏性好于‘北陆’,‘北陆’蓝莓最长冷库气调箱贮藏期为84 d,货架5 d果实最长贮藏期为63 d,‘伯克利’蓝莓最长冷库气调箱贮藏期为105 d,货架5 d果实最长贮藏期为84 d。
The quality and physiological changes of two cultivars of blueberry (‘North land’ and ‘Berkeley’ ) were analyzed in modified atmosphere box under 0 ℃±0.5 ℃ during storage and 5-day shelf-life. The results showed that O2 volume fraction was reduced and CO2 volume fraction was increased in the modified atmosphere box, the firmness, titratable acid and vitamin C mass fraction declined, the bad fruit rate increased. The peaks of PPO and POD activity appeared more than once. The storage quality of ‘Berkeley’ was better than ‘North land’. The longest box modified atmosphere storage period of ‘North land’ was 84 days for storage and 63 days for shelf-life fruits, while the suitable period of ‘Berkeley’ was 105 days for storage and 84 days for shelf-life fruits.
