糖和脂肪是成酸食物吗?

Abstract:
在描述人体酸碱平衡或食物酸碱性质的教科书中,把人类的主要食物糖和脂肪划定为成酸食物。实际上糖和脂肪在代谢过程中产生的微量固定酸仅仅是中间过渡产物,最终都分解成CO2和H2O;脂肪代谢残留0.01g/24 h酮体从尿液中排出。糖和脂肪代谢的主要产物是CO2和H2O,大部分CO2转变成碱性物质HCO3-,仅有少量生成H2CO3。成人在每日的膳食组成中,由糖和脂肪提供的HCO3-可达到10 000 mmol,而H2CO3只有500 mmol,其碱性物质比酸性物质多20倍,因此糖和脂肪是成碱食物。
Textbooks that talk about the acid-base equilibrium in human body or the acid-base property of foodall consider sugar and fat as acid-forming food. In fact, the fixed acid produced by sugar and fat in metabolism is justthe transition product and will finally be resolved into carbon dioxide (CO2) and water (H2O), and the residue of fatmetabolism, 0.01 g/24 h ketone bodies, will be discharged via urine. The main metabolic products of sugar and fat areCO2 and H2O. Most of the CO2 will be transformed into bicarbonate ion (HCO3-) that is a base compound, and only a fewof it will become carbonic acid (H2CO3).
