乙烯利对绿豆芽生长及品质的影响Effects of ethephon on the growth and quality of mung bean sproutsKeywords: 绿豆芽 生长 品质 下胚轴 乙烯利mung bean sprout growth quality ethephon Abstract: 为了研究乙烯对绿豆芽生长及品质的影响,分别用4个不同浓度乙烯利(30、60、90、120 mg/L)处理绿豆,让其在25 ℃条件下萌发,并每隔1 d测定绿豆发芽过程中的生长指标和营养指标。结果表明,不同浓度乙烯利处理对绿豆芽生长和品质有不同程度的影响,其中90 mg/L的乙烯利处理绿豆芽有利于下胚轴轴径的加粗,能够抑制侧根的伸长、生长。绿豆芽在4 d时鲜重达到0.52 g/根,可溶性固形物、可溶性蛋白和维生素C含量分别为9.47%、0.40 mg/g和14.95 mg/100g,与对照组存在显著性差异,且丙二醛(malondialdehyde,MDA)含量较低,保持了较高的过氧化氢酶(peroxidase,POD)活性,对绿豆芽栽培有显著促进作用。In order to study the effect of ethylene on the growth and quality of mung bean sprouts,mung beans were treated with 30,0,90 and 120 mg/L ethephon,respectively.The growth indexes and nutrition indicators in the germination process of mung bean sprout (25 ℃) were measured every other day.The results showed that different concentrations of ethephon treatment on mung bean sprout had different influence on the growth and quality.Meanwhile ethephon treatment with 90 mg/L was advantageous to the hypocotyl diameter of axle bold,and inhibited the growth of lateral root elongation.On the 4th day after treatment,the fresh weight of each bean sprout reached 0.52 g,and soluble solids,soluble protein as well as vitamin C were 9.47%,0.40 mg/g and 14.95 mg/100g,respectively,showing significant difference with the control.Furthermore,the mung bean sprout treated with 90 mg/L ethephon had lower malondialdehyde(MDA)content and maintained a higher peroxidase(POD)enzyme activity,which has a significant positive effect on the cultivation of mung bean sprouts.
