植物性产品重金属污染状况及其健康风险评价

Abstract:
植物性产品是人类食物的重要组成,植物性产品中重金属含量超标将给人类身体健康带来风险。采用icp-ms测定了从江西瑞昌县5个不同市场采集的玉米样品中9种重金属(cd、cu、pb、cr、zn、ni、al、mn、co)的含量,并参照国家食品卫生标准评价重金属污染状况;利用靶标危害系数(thq)和危害指数(hi)评价食用市售玉米对成人和儿童带来的潜在重金属健康风险。结果表明:研究区内市售玉米各重金属元素含量都远低于现行国家食品安全限值,未出现超标现象;居民通过玉米摄入的各重金属的thq和hi均小于1,对人体的健康风险较低;9种重金属对成人和儿童造成的健康风险的顺序依次为zn>mn>co>cu>ni>pb>cd>al>cr,其中重金属暴露对儿童的健康风险明显高于成年人。总体来看,研究区内市售玉米质量良好,没有明显的重金属健康伤害,但应注重对儿童摄入量的控制。
