赭曲霉毒素A的肠毒性及其营养干预

Abstract:

赭曲霉毒素A(ochratoxinA,OTA)是一类主要由曲霉属和青霉属等产毒真菌产生的真菌毒素,广泛存在于各种粮食作物及其副产品中,是食品和饲料原料的重要污染物,其广泛的毒理病理学效应对动物生产和人类健康构成了极大的潜在危害,已引起了人们的高度关注。肠道既是OTA等外源有毒有害物质的主要吸收部位,又是阻挡其进入体循环的第1道物理屏障,同时还可能是其发挥毒性效应的靶器官。因此,本文就OTA的肠毒性及其作用机制、营养对OTA肠毒性的缓解效应做简要综述,以期为缓解OTA的肠毒性提供理论基础和实践依据。
