动物源性抗氧化肽的生物学功能及与其结构的关系

Abstract:

氧化应激是诱导脂质腐败、促使细胞凋亡、导致组织损伤及病变的主因。摄入适量抗氧化剂可有效清除体内过剩的自由基,防止脂质过氧化,保护线粒体的正常结构和功能,进而降低腹水综合征、癌症、动脉硬化、糖尿病等疾病的发病率。作为一种天然抗氧化剂,动物源性抗氧化肽由于其原料来源广、安全性高、易吸收等特性而成为国内外研究的热点。本文针对动物源性抗氧化肽的种类、结构及其生物学功能的研究状况进行综述,重点探讨抗氧化活性肽的生物学功能及与其结构的关系,并就目前抗氧化肽研究的难点及其在医药、食品等领域中的应用前景做了分析和展望。
