肠杆菌科细菌在热鲜肉上生长预测模型的建立与验证

Abstract:

将肠杆菌科细菌接种到宰后1h的无污染的热鲜肉上,置于灭菌培养皿上并分别于5、10、15、25和30℃贮藏,建立肠杆菌科细菌在热鲜肉上的生长预测模型,并对模型进行验证。采用SPSS17.0统计软件拟合特定温度下的生长情况。结果表明修正的Gompertz模型能很好地描述不同温度下肠杆菌科细菌在热鲜肉上的生长状况。对最大比生长速率和延滞时间建立平方根模型,结果呈良好的线性关系,相关系数(R2)分别为0.97和0.98。用贮藏在8和22℃热鲜肉中肠杆菌科细菌的生长试验值验证所建立的模型,并对偏差度、准确度、残差平方和及均方根误差进行计算和分析,结果表明建立的模型可靠性高,可有效预测5~30℃肠杆菌科细菌在热鲜肉上的生长。
