黑豆皮花青素的不同提取方法及其体外抗菌活性比较研究

Abstract:

对黑豆皮花青素不同提取方法,传统有机溶剂法、水浸提法、超声波辅助法的提取率进行了比较,结果表明:超声波辅助法的提取率最高,达到20.50%。并采用滤纸片法对3种不同提取方法所得的花青素抑菌效果进行了比较,结果显示:水浸提法对枯草芽孢杆菌、金黄色葡萄球菌、大肠杆菌3种细菌的抑菌圈均最大,抑菌效果最好。另采用平板菌落计数法对水浸提法所得的花青素抑菌率进行比较发现,从低浓度到高浓度抑菌效果逐渐增强。当花青素在浓度为0.3g.mL-1时,对枯草芽孢杆菌、金黄色葡萄球菌和大肠杆菌3种细菌的抑菌率最高,分别达到79.75%、74.50%和81.60%。
