贮藏温度对富硒栽培猕猴桃品质和硒组分的影响

Abstract:

为了探讨富硒栽培红阳猕猴桃在贮藏过程中品质和硒代谢的变化,提高贮藏期硒组分的利用率,本研究将富硒栽培红阳猕猴桃分别在-1.5(冰温)、5(低温)和20℃(常温)3个条件下贮藏,分析了不同贮藏温度对果实品质和硒组分的影响。结果显示,冰温贮藏下果实硬度、可滴定酸下降速率以及呼吸峰值均显著低于低温和常温贮藏(P低温>冰温。本试验说明通过冰温贮藏可以延长果实贮藏期和降低硒组分的流失,为果实贮藏保硒以及硒组分转化提供了理论依据。
