鱼糜漂洗水中蛋白质的回收及其再利用

Abstract:

鱼糜是水产品加工的重要产品之一。在鱼糜生产中,为得到弹性好、白度高的优质鱼糜,鱼肉往往需要漂洗,因而产生大量的漂洗水。鱼糜漂洗水富含蛋白质等营养成分,直接排放不仅降低了蛋白资源的利用率,而且增加了废水处理负荷,极易造成环境污染。通过调节pH值、添加絮凝剂等方法可以回收鱼糜漂洗水中的蛋白,而回收蛋白除制作饲料外,也可用于鱼糜或者其他食品生产。本文主要介绍了鱼糜漂洗水蛋白质的回收技术及回收蛋白再利用的研究进展,指出了实际生产应用中所存在的一些问题,旨为鱼糜的清洁化、高值化生产提供依据。
