CONTRIBUTION A L'ETUDE DE LA QUALITE MICROBIOLOGIQUE DE DENREES ALIMENTAIRES COMMERCIALISEES A FES-BOULEMANE

Abstract:

1577 food samples belong to different categories were collected from different points of sales in the Fés-Boulemane region (Fés Prefecture and My Yacoub Province) located in central north of Morocco. Of their microbiological quality, it appears that the majority of samples coming from the Fés prefecture (77.50%) had a percentage of nonconformity of 75.10%, while that of samples My Yacoub province is on the order of 24.90%. The rate of non-conformity varies from one product to another. It is 68.50% for dairy products, 59.50% for meat products, 58% for beverages and soft drinks, 33.30% for fishery products, 32.70% for plant products, 15.10% for pastry and pastry cream, 13.70% for meals and 4% for egg products. Some foods are of good hygiene quality, especially canned and semi-preserved with a percentage of non-conformity of 0.00%. We also noted that the main causes of non-conformity of foods are the germs of fecal contamination with a percentage of positivity of total coliform of 30.90% and 26.20% of fecal coliform. Overall, the percentage of non-conformity during the period 2003-2006 was 34.90%. This percentage was a sharp decrease from 40.30% in 2003 to 28.30% in 2006. However, non-conformity continues to witness an increase during the summer season. It is therefore necessary to improve the hygienic quality of these foods to ensure better consumers’ safety.
