Correlation between the quantitative descriptive profile and flash profile of barrilete negro fish (Euthynnus lineatus) pattiesKeywords: Descriptive profile , Flash profile , sensory evaluation , fish patties Abstract: characterization and correlation degree of the results generated with a trained panel employing the Qualitative Descriptive Analysis (QDA). Flash Profile technique (FO) was also employed but with none trained panel. Results were analyzed by Principal Components Analysis (PCA) and Generalized Procrustes Analysis (GPA). Correlation was evaluated by a multiple factorial analysis (MFA). Results of PCA and GPA were 85.95 and 83.23 for QDA and FP, respectively, demonstrating a similar classification of the treatments between both techniques. Sensory space of MFA was 0.80 by both panelist groups, indicating a correlation with the characterization technique. Both classification techniques were similar, with a strong correlation in the sensory information structure, indicating that the combination of both sensory techniques improved the product description for the better understanding of the product acceptance or reject, previous to market study.
