Abstract:

Consumption of any kind of meat is important for the proper functioning and development of the human organism. The Metropolitan Area of the Valley of Mexico (MAVM) is the main meat marketing and consumption center in the country. The objective of this work was to characterize the consumers of the three main types of meat (beef, chicken, and pork) in the MAVM in order to know the products demanded, associated to variables such as income level, consumption, product value-added services, among others. The methodology used was the CHAID algorithm (Chi-squares Automatic Interaction Detection), and association tests through the X2 distribution, economic and social quantitative segmentation variables. The information was obtained through a semi-structured survey applied to 440 individuals. Data analysis was done on contingency tables with relative frequencies. The results showed that low and medium level consumers, with low and middle incomes, mainly demand popular cuts; they buy them in local supermarkets, open markets, and neighborhood butcheries. Mostly consumed is unrefrigerated meat with few value-added services.
