Research of the statics of the process of drying of ovarian liquid of sturgeon for perfection of caviar technology

The results of experimental and analytical researches of the statics of the drying process of ovarian physiological liquid of sturgeon for the subsequent organization of industrial caviar production – a powder for the cosmetics industry, are presented. It is recommended to realize technological stages of processing, prepacking and packing promptly taking into account relative air humidity of the operational zones, as caviar sol of spray drying is a powder with a high absorbability.
