La conformación de la etnicidad a partir de los hábitos alimenticios: su abordaje desde la Antropología y la Arqueología históricaKeywords: ethnicity , food , anthropology , historical zooarchaeology Abstract: This work aims to develop general aspects of how problems of ethnicity and the interaction of native and immigrants populations can be studied from the archaeological record. To this aim it is necessary to consider the contributions of the anthropology of food. We also discuss works developed within the frame of historical archaeology, mostly in the U.S.A., and one case study in Rosario (Santa Fe, Argentina). The last one is relevant because it handles the hypothesis that the consumption patterns changed after the arrival of immigrants (in the end of XIX century) and this changes were reflected in the archaeological record of the historical sites, in the preferred species as well as in the way they were prepared.
