De apetitos y de ca as. El consumo de alimentos y bebidas en Santiago a fines del siglo XIX

Este artículo se ocupa de una necesidad básica del ser humano: su alimentación. Sobre la base de la fecunda prensa satírica, muestra cómo y qué comían los chilenos y chilenas del 1900, ya sea la elite como el pueblo. Junto con explorar los sabores y aromas de los platos más representativos, hay un acercamiento a la sociabilidad que se generó en torno a la comida y a un problema de larga data como es el alcoholismo. En ese sentido, se trata de una historia social de la alimentación que aporta indicios interesantessobre la sociedad urbana del Chile de la época. This article is about one of the human being's basic necessiteies: their feeding. On the base of the fertile satirical press, it shows how and what the Chileans used to eat around the 1900, both elite and common people. Together whit exploring the flavors and aromas of the most representative dishes, there is an approach to the sociability that was generated around the food altogether whit a long duration problem like alcoholism. In such a sense, it a social history of the feeding that contibutes interesting indications of the diet costums on the chilean urban society of this time.
