Hygienic quality of collected hawking milk outlets in the city of RabatKeywords: microbiological analysis , hawking milk , Rabat , Morocco Abstract: Samples of raw milk were collected from retail outlets in the city of Rabat, were analyzed to assess the hygienic quality. Results indicated that counts of the aerobic plate count were particularly high in all the samples analyzed (4.4 107CFU/mL). Total and fecal coliforms were average of 3.8 105 CFU/mL and 1.91 105CFU/mL respectively. Staphylococcus were absent in all samples. The presence of germ contamination (Klebsiella, Proteus mirabilis and E coli) attest the poor hygienic quality of circuit hawking milk. Isolation and biochemical identification of nine strains of lactic bacteria revealed three species of Lactobacillus genus: Lactobacillus acidophilus, Lactobacillus amylovorus et Lactobacillus yamanashiensis.
