RELATION BETWEEN ENZYME ''''ACTIVITY AND LATENTINFECTION OF COLLETOTRICHUM CORDA IN THEPEELS OF BANANA AND MANGO FRUITS

Abstract:
Activity of peroxidase (POD) and polyphenol oxidase (PPO) in peels were raised with the development of fruits on the trees. The changes of activity on POD and PPO relate to resporatory metabolism in peels of postharvest banana and mango fruit. Phenylalanine ammonia-lyase (PAL) is distributed mainly in the peels, and activity of the enzymes decreased very obviously with the increase of fruit ripeness. Activity of POD, PPO and PAL in peels of diseased fruits are higher than that of the healthy ones, which indicates that change of the enzyme activity in peels relates to latent infection of Colletotrichum Corda.
