STUDY ON THE EFFECTS OF DEHYDRATION BY THE PRESSURE AND FROZEN ON THE YIELD AND QUALITY OF AGAR

Abstract:
The effects of dehydration by the pressure and frozen methods on the qualities and yield of agar gel extracted from Gelidiella acerosa and Gracilaria blodgettii were compared. The results showed that the agar produced by the pressure method had the better gel strength and qualities than that produced by the frozen method, but the agar yield was reversed, the fprzen method gave a higher yield.
