The Essential Amino Acid Contents of Dark Rice

Abstract:
A series of studies were conducted to evaluate the essential amino acid centents of dark rice (Oryza sativa).The results showed that in purple rice and black rice the concentration of the eight essential amino acids were 42.21% and 4l.89% of the total amino acid respectioely, heigher than in common rice. The amino acid composition are similar to egg albumin.
