Abstract:

The train monascus sp. was chosen as the start strain for mutagenic treatments with Ultrasonic wave. After the mutagenic treatments high mutant was obtained. And fermentation liquid was treated with on line ultrasonic during deep submerged fermentation. The results indicate that the Monascus pigment and Monacolin K content of the mutant is higher than that of the parent strain. Numerical value reached 29.74% and 39.96% respectively.
