Advances in Bioaccessibility of Nutrients and Pollutants in Food

Abstract:
Bioaccessibility is an important means of evaluating the nutritional value and the risk of poisonous substances to human. And the method of in vitro digestion is mainly used to access the bioaccessibility of materials, which are consumed either accidentally or intentionally in the diet. In this paper, we ascertain the research significance of bioaccessibility in evaluating the quality of food, outlining the different determination methods of bioaccessibility and their respective advantages and disadvantages. Then, the physiological basis, experimental operation and the main achievements of bioaccessibility testing in various food samples of in vitro digestion are summarized. Lastly, present problems of in vitro digestion are pointed, and the application prospects are also discussed.
