Sistema trazable en el proceso de extracción y beneficio del polen corbicular colectado por Apis mellifera L. (Hymenoptera:Apidae) en la zona Altoandina de Boyaca, ColombiaKeywords: beekeeping, food safety, corbicular pollen, quality control, haccp. Abstract: corbicular pollen is a product collected by bees that after a delicate process of agglomeration, and stabilization, by drying has gained commercial importance in the marketing of natural products due to its nutritional and therapeutic properties. in this work we consider the origin and conditions for pollen production at highland lands mountains in boyacá (colombia). traceable process has been recognized history, location and path of pollen from 45 facilities 572 qualifying bee hives and three processing systems from benefit area until their stabilization by drying also has been considered a line handling, feeding and maintenance on the apiary, following quality criteria, management practices for critical and hazard points. the origin of pollen analyzed belongs to 35 taxa of 18 botanical families. physicochemical and microbiological properties are included; optimal temperatura for raw pollen in the drying process is 42,5 ± 3°c, moisture in dry pollen is in the rank from 4,10 to 5,80% w/w, multifloral origin with yellow, orange and brown color composition are distinguible. the implementation of traceable system allows evaluate the characteristics and conditions product at different stages of process in systematic way using controls through software. work contributes to a model made traceable to bee products tending for product safety and consumer health.
