Microbiological criteria in public catering: sampling and auditing experiences in canteens and cafeterias in Piedmont

Abstract: In the period 2006-2011 six public catering establishments (3 canteens and 3 cafeterias) were monitored, trough audit and sampling, in order to verify the application of good manufacturing and hygiene practices during food production, handling and serving. The compliance to microbiological food safety criteria (Listeria monocytogenes and Salmonella spp.) and process hygiene criteria were investigated using ISO standards for microbiological analyses. A total of 612 samples were collected: 192 food samples and 288 environmental swab samples from canteens; 33 food samples and 99 swab samples from cafeterias. Regarding food safety, two samples were in disagreement with criteria fixed in EU Regulation as Listeria monocytogenes was isolated from a turkey breast in a canteen and from a sandwich in a cafeteria. Regarding process hygiene criteria, as no microbiological limits are legally defined for catering services, for this study limits were fixed according to the quality standards of tender, scientific literature and laboratory experience. 23.4% foodstuffs and 8.7% swabs resulted non-compliant in canteens; 48.5% foodstuffs and 6.1% swabs resulted non-compliant in cafeterias. The count of coagulase-positive staphylococci (CPS) was higher of the fixed limits in raw turkey meat and in cooked spinach: the presence among CPS of S. aureus was confirmed, strains were not able to produce enterotoxins. The most common non-compliance in hygiene criteria was represented by aerobic colony count (60.7% of total non-compliance in canteens and 75.0% in cafeterias) and coliform bacteria (20.3% in canteens and 25.0% in cafeterias). Nine raw foods or raw readyto- eat food samples were non-compliant for both coliform bacteria and aerobic count; one sample (raw turkey meat) was non-compliant for CPS and aerobic count but resulted to be compliant after cooking. Auditing and sampling are the most effective tools to improve food quality standard and to enhance food business operators’ awareness of hygiene procedures.
From Control to Co-Creation: The Rise of the Wheeler Manager in Value-Driven Organizations  [PDF]

Abstract: This article examines the emergence of the Wheeler Manager as a novel managerial archetype enabling value creation through co creation in contemporary organizations. Grounded in Traversa’s conceptualization of the Wheeler Manager within flat and circular organizations (Beretta et al., 2024; Traversa, 2024), the study integrates service dominant logic and network theories of resource interaction. A comprehensive literature review maps the shift from hierarchical control to facilitative roles emphasizing transparency, inclusivity, and cross-functional coordination. The Wheeler Manager’s function is theorized as a facilitator of continuous feedback loops, fostering collaboration across internal and external stakeholders. The paper presents a theoretical framework situating the Wheeler Manager at the intersection of organizational design, co creation processes, and strategic value generation. It discusses how this role enables dynamic resource recombination, accelerates collaborative episodes, and sustains longitudinal value journeys (Perna et al., 2022). Managerial implications suggest that adopting the Wheeler Manager role supports resilience, adaptability, and sustainable growth in organizations transitioning toward circular or flat structures. Future research avenues include empirical validation across industry contexts and longitudinal case studies to assess the impact of Wheeler Managers on value outcomes and organizational performance.

Abstract: The genus Trichuris encompasses nematodes affecting pets, livestock and other hosts, including human beings. These parasites are called whipworms, having a really thick ("whip handle") posterior part of the body and a long and slender anterior part. A mistake in the naming of the genus reflects the destiny of these elusive and enigmatic parasites, Trichuris, in fact, means "hair-tail", and was, most likely based on an erroneous past definition that the anterior extremity of the parasite body was the tail and not the cephalic end. An alternative name, i.e. Trichocephalus, was thereafter proposed to indicate a "hair-head"-like parasite, but was not accepted by the International Code of Zoological Nomenclature. Consequently, whipworms are classified in the genus Trichuris spp., but some authors still call them Trichocephalus spp., albeit erroneously [1].Trichuris vulpis, the canine whipworm, and Trichuris trichiura, the human whipworm, are the most important species in veterinary and human medicine. Although dogs and canids in general are preferential hosts of T. vulpis, its significance for human medicine is its controversial zoonotic ability. The present lack of an update on canine trichurosis is probably due to the fallacy that all major aspects of T. vulpis are well known and that there is nothing really new to be investigated or disseminated.Therefore, the aim of this article is to provide an overview of the state-of-the-art on the most important features of canine whipworm infection, together with a critical discussion of any weaknesses or gaps in our current knowledge. Abstract: This report aims to propose a new species of Cryptosporidium isolated from reptiles. Cryptosporidium spp. are apicomplexan parasites of a wide range of animals. Due to their biology, ecology and epidemiology these protozoa are globally distributed. The vertebrate hosts become infected through host-to-host contact or through ingestion of contaminated food or water [1,2]. The taxonomy of Cryptosporidium has been debated and several doubts and uncertainties still exist. For a long time the only recognized species have been Cryptosporidium parvum and Cryptosporidium muris. However, numerous other isolates were present in animals but described only in the last decades [3]. The difficulties in addressing Cryptosporidium taxonomy and in delineating new species mainly rely on the inability to morphologically discriminate the biological stages and on the difficulties in establishing monospecific experimental infections [3]. With the advent of nucleic acid-based techniques and sequencing, important results have been achieved in elucidating the taxonomical status of several Cryptosporidium isolates and presently 19 distinct species are known to affect amphibians, reptiles, birds and mammals [2,4]. Three more species are hypothesized to infect fishes but their status is not supported by sound biological and molecular data [2,4]. Indeed, the genetic characterization, at one or more loci, of Cryptosporidium is a fundamental requirement to assess, at the species level, a new Cryptosporidium isolate, along with the morphological description of the biological stages and definition of the host range, possibly based upon natural and experimental infections [2,4].Non-conventional animals, such as reptiles, have increased in popularity as pets in developed countries, posing new concerns in relation to their pathogens. Abstract: over recent years the state has progressively included the private and tertiary sectors in the implementation of public policies, creating, thus, true "policy networks". however, the effects of this new style of policy management are not limited to the manner in which public policies are implemented, but also affect the global logic of those policies and their outcomes. the role of the state in this new order is unclear, in particular following the strong attacks on the public administration that took place during the final quarter of the last century. this article analyzes the policy network that has developed around the ministry of housing, ordenance and the environment's housing programs since 1991. the research concludes that transparency and equity in public policies are not achieved by the simple creation of a policy network. the state therefore has an important role to play in the new forms of management, but the author has the view that efficient action on the part of the state depends on the existence of a technically qualified public administration with personnel policies that must be defined independently of party politics.
Regímenes de acumulación capitalista: Un enfoque estructural para analizar la estabilidad de la democracia (1945-2001)

Abstract: fifty years ago, lipset (1959) linked the capitalist economic development with the expansion of democracy. using the concept of regimes of accumulation (boyer, 2007) this paper attempts to offer a different perspective on this relationship. first, here i argue that only some regimes of capitalist accumulation were associated with democratic stability in the period 1945-2001; and only because of their special patterns of income distribution, and their stable rates of gdp growth. further, the effects of income distribution on democratic stability are evaluated here in new ways. first, because the median voter theorem is not used here (acemoglu and robinson, 2006; boix, 2003). and second, because instead of using the gini index as an independent variable, here i constructed a measure of income polarization (ied) that predict democratic stability more efficiently than the gini index.

Abstract: Hace cerca de cincuenta a os, Lipset (1959) ligó el desarrollo económico capitalista con la expansión de la democracia. A partir del uso del concepto de regímenes de acumulación (Boyer, 2007) este trabajo intenta ofrecer una perspectiva diferente sobre esta relación. Se argumenta que sólo algunos regímenes de acumulación capitalista estuvieron asociados a la estabilidad democrática en el período 1945-2001, y esto debido a sus patrones especiales de distribución del ingreso, y a sus ritmos estables de expansión del producto. Además, aquí se evalúan los efectos de la distribución del ingreso sobre la estabilidad democrática, en forma novedosa. Primero, porque se abandona el uso del Teorema del Votante Mediano (Acemoglu y Robinson, 2006; Boix, 2003). Y segundo, porque para la exploración empírica no se utiliza el índice de Gini como variable independiente; en su lugar se construye una medida de polarización de ingresos (IED) que permite predecir en forma más eficiente la estabilidad democrática. Law of Probability Equilibrium (LPE) and Bounded Randomness: Light in the Universe, Photon Emission and Black Holes  [PDF]

Abstract: The relationship between chance and determinism has been analyzed by philosophy, mathematics, and physics. With the aim of identifying the intersection between the two, the Law of Probability Equilibrium (LPE) was demonstrated. When the probabilities of natural phenomena differ from zero and one, the LPE shows that the observed probability is empirical and that the cumulative probability functions of these phenomena measure the imminence of their occurrence (“energy concentration”). These functions behave like waves that carry information about the probabilistic (“energetic”) potential for the materialization of such phenomena. Probability functions exhibit properties analogous to quantum systems, such as complementarity, superposition, uncertainty, collapse, duality, interference, and entanglement. The findings indicate that chance and determinism converge at a cumulative limit of ?, forming a self-regulating equilibrium within the probabilistic field. This implies both the certainty of occurrence and the unpredictability of its timing. Even events with infinitesimal probabilities will inevitably occur. The LPE shows that the probability potential decreases until it reaches zero (“maximum entropy”). Accumulated randomness is restricted to a maximum value of ?, allowing for causal processes (e.g., emission and absorption). Each probabilistic event, before being observed, exists in two superposed states: presence and absence, and it possesses a simultaneous and distinct probabilistic duality. One of these values is derived from the density function at the final instant, while the other is accumulated and remains stationary at ?. Upon measurement, the two probability density functions collapse into presence or absence (1 or 0) (“particle modality”). Meanwhile, the two cumulative probability distribution functions remain entangled, each stabilizing at ? (“wave modality”). The LPE unifies principles of classical and quantum physics through a probabilistic view of the universe. The probability of light detection in the universe is 3.33 × 10-9 s/m, a universal parameter that suggests the existence of approximately 8.01 × 1026 stars in the visible universe.
