Análisis crítico de las metodologías de registro de dieta alimentariaKeywords: dental caries, diet, habits alimentary. Abstract: the evaluation of the foods cariogenicity is important in the dental caries prevention and control, and it should base on information obtained on the alimentary habits. the arm of this study went accomplish a bibliographical review and a critical analysis of diet registration methods. it was found in the literature four different types of registration methodologies and the analyzed instruments correspond at three of those methods: frequency questionnaire (a), diet diary (b) and dietary history (c). the a instrument is a quantitative method of guided consumption, could be self-administered. the b instrument is it more used in researches and in the dentistry clinic, depending of the patient's cooperation in to register the data. the c instrument allows that the alimentary habits are expressed in a natural way, because the data are collected by interview. all the presented methods are useful in the private or public dentistry clinic, since used in a correct way.
