Orthogonal experimental design was used to optimize the extraction process of turmeric volatile oil. The antioxidant activity in vitro of turmeric volatile oil against 1,1-diphenyl-2-trinitrophenylhydrazine (DPPH) was quantitatively compared by ultraviolet-visible (UV-Vis) spectrophotometer. The results showed that the optimum extraction conditions of turmeric volatile oil by steam distillation were as follows: number of turmeric crushed is 60, material-liquid ratio is 1:20 and extraction time is 4 hours, respectively. The IC50 value of turmeric volatile oil against DPPH was about 50 mg/mL or so. The extraction process and antioxidant activity test method are simple, with a high extraction rate and reliable results, which can provide a reference for the further development of turmeric products. %K 姜黄挥发油, %K 提取工艺, %K 抗氧化
