Highland barley, the main crop of the Qinghai-Xizang Plateau, is rich in nutritional value and offers numerous health benefits. This paper systematically summarizes the primary bioactive compounds of highland barley and their functions, such as β-glucan and polyphenolic compounds, through a review of relevant epidemiological and experimental studies, and comprehensively explains their protective effects on metabolic health, including lowering blood sugar, reducing blood lipids, controlling weight, combating hypertension, preventing cardiovascular diseases, and their potential benefits as a healthy grain food.
