%0 Journal Article %T The Microbiological Quality of Stuffed Mussels Sold in Different Regions of £¿zmir %A Berna KILIN£¿ %J - %D 2018 %X The aim of this study was to determine the microbiological quality and consummability of stuffed mussels which were sold in markets in three different regions of £¿zmir. Stuffed mussels are produced from black mussel (Mytilus galloprovincialis). Stuffed mussels are commonly sold and consumed in £¿zmir. Stuffed mussels are more sold by street vendors, but recently they have been also sold in markets. If stuffed mussels are not produced by using good hygienic conditions, they can be risk for humans causing diseases and poisonings after consumption. For this reason determining the microbiological quality of stuffed mussels are very crucial for public health. As a result of this study; the total mesophilic bacteria counts of stuffed mussels were determined as A (<10-4.6x105 cfu/g), B (1.0x101 -5.5x105 cfu/g), C (<10 cfu/g-4.2x105 cfu/g). Coliform bacteria were determined in only two samples (43 MPN/g and 4 MPN/g) taken from the region of A.
