Application of Metal Oxide Arrayed Sensor in Honey Quality Control %A 胡莉杰 %A 张翼鹏 %A 唐丽 %A 郭青 %A 李源栋 %A 王猛 %A 王明锋 %A 曾大文 %J Journal of Sensor Technology and Application %P 23-33 %@ 2331-0243 %D 2020 %I Hans Publishing %R 10.12677/JSTA.2020.82003 %X 蜂蜜作为常用的食品添加剂,其品质控制对食品的最终质量有着重要的影响,而传统的色谱法、光谱法等品质控制检测方法因昂贵的设备、复杂的操作等缺陷制约着其在实际生产中的应用。本文采用基于纳米半导体气敏传感技术制作的4阵列传感器,对6个蜂蜜样品的挥发性成分进行了检测,获得了蜂蜜样品挥发性物质的综合特征气味指纹,利用SPSS工具对获得的特征气味指纹进行主成分降维分析(PCA),成功实现了蜂种、采花种类、采集日期、生产地任一生产要素不同蜂蜜样品的区分。该方法具有成本低、操作便捷、分析简单的优势,可用于蜂蜜以及其他具有挥发性物质的食品添加剂或香精香料的品质控制。
As a commonly used food additive, the quality control of honey has an important impact on the final quality of the food. However, the traditional quality control and detection methods such as chromatography and spectroscopy are restricted by the defects of expensive equipment and complicated operation. In this paper, arrayed sensor based on nano-semiconductor gas sensing technology was used to detect the volatile components of six honey samples, and the comprehensive characteristic odor fingerprints of the volatile components of honey samples were obtained. The SPSS tool was used to perform principal component dimension reduction analysis (PCA) on the obtained characteristic odor fingerprints, and successfully distinguished honey samples of different production factors such as bee species, flower types, collection date or place of production. The method has the advantages of low cost, convenient operation and simple analysis, and it can be used for the quality control of honey and other food additives or flavors and fragrances with volatile components. %K 阵列传感器,蜂蜜,品质控制,金属氧化物
