L-alanine is a kind of amino acid with special fragrance and sweet taste, which can be used as food enhancer and wildly applied to beverage, dairy, cakes and all kinds of seasonings. L-alanine can improve the nutritional value and the flavor of foods. It has wide development prospect and great market potential. In this paper, the characteristics of L-alanine in food were analyzed.</span>
